A trip to the South of France isn’t necessary to savor the alluring fragrance and sweet flavor of Provençal lavender. Simple suspension of these purple spikes and mint foliage in cubes of ice add French flair to an otherwise modest glass of water or summer spritzer of choice.
Lavender Mint Ice:
- 1 Bunch of organic French lavender (the French variety is thinner and more suited to freezing, while the Spanish cousin is thicker)
- 1-2 Sprigs of fresh organic mint
- Filtered water
- 2-3 Ice Cube Trays
Wash the lavender and mint. Collect the flower buds by snipping off the stem as close to the bud as possible. Select smaller mint leaves to use; alternatively cut the mint leaves into slivers.
Place one bud and one mint leaf in each ice cube slot. Pour filtered water over the plants – they will rise to the surface.
Freeze until ready to use.
