The vibrant orange color of my favorite fall squash comes from “beta-carotene”, a pro-vitamin A carotenoid metabolized by your liver. Vitamin A is best absorbed with fat (just like the other fat-soluble vitamins E, D, and K) and another reason to balance your plate with healthy lipids. Vitamin A plays a key role in gene expression, immunity, and red blood cell production (emphasizing the interconnectivity of vitamin A with the mineral iron as well). Searching for other plant sources of beta-carotene? Consider sampling papaya, carrots, sweet potatoes, apricots, peaches, peppers, melon, avocado, mangos and broccoli. What a feast for the eyes and stomach alike! 🎃
